Ingredients
- Isabgol -6g
- Warm water-120g
- Gluten free flour - 90g
- Olive oil- 15g
- Salt- to taste
- Black pepper - to taste
- Pizza seasoning - to taste
- Tofu - 40g
- Zucchini - 20g
- Red bell pepper -20g
- Purple cabbage -20g
- Pea pesto - 15g
Equipments Required: Pan, knife, spatula, chopping board, bowl
Cooking Instructions:
- Cut zucchini, red bell pepper and purple cabbage into juliennes and keep aside.
- Cut tofu in 2 slices. In a pan, heat some oil, add tofu, salt, black pepper, pizza seasoning and cook till golden brown from both the sides.
- In the same pan, heat a little more oil and sauté the zucchini first, followed by the red bell pepper and purple cabbage. Season with salt and pepper to taste.
- Meanwhile, bloom the isabgol in warm water.
- In a mixing bowl, add gluten free flour, salt, bloomed isabgol and oil to knead dough. Rest this dough for 10 mins.
- Divide the dough in 2 portions and roll them each into a round tortilla for the wrap.
- In a wide pan brush some oil and cook the rolled tortilla from both the sides.
Assembly: On the tortilla spread some pea pesto and put the tofu in a line. On top of that add some sauteed vegetables and roll the tortilla in a wrap.
Storage: Store in an airtight container wrapped with butter paper for a day in the refrigerator.
