Ingredients
  • Gluten free pasta -1cup
  • Yellow zucchini -1/4cup
  • Red bell pepper -1/4 cup
  • Olive oil- 1tbsp
  • Salt- to taste
  • Black pepper - to taste
  • Basil pesto -1/4 cup

Equipments Required
  • Saucepan
  • Frying pan
  • Strainer
  • Spatula
  • Grater
  • Knife
  • Chopping board

Cooking Instructions:
  1. Cut zucchini in half moon shape and red bell peppers into medium dices, keep aside.
  2. Boil the pasta with some salt and oil till it's 90% cooked, once boiled remove it in a strainer and coat with some oil to prevent them from sticking. Keep the strained water for later use.
  3. In a pan, add some oil and saute zucchini followed by red bell pepper. Add salt and black pepper as per your taste.
  4. Add basil pesto and cook till some oil separates, add a little bit of the pasta water to the pan followed by boiled pasta.
  5. Mix all together and cook for 2-3 mins.
  6. Serve hot with some grated tofu on top as garnish.

Storage: Store in an airtight container in the refrigerator for 1-2 days.

Pairing notes: Use as a wholesome meal along with some garlic bread and white wine.
