Makes
1 large Cookie Tin (serves 4–6)
Ingredients
Dry Ingredients
- 120 g almond flour
- 60 g jowar flour
- 30 g tapioca starch
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp sea salt
Wet Ingredients
- 90 g almond butter
- 55 g coconut oil (melted)
- 70 g khandsari sugar
- 1 tsp vanilla bean paste
- 2 tbsp plant-based milk
The Good Stuff
- 120 g vegan dark chocolate (70%), roughly chopped
- 50 g toasted pecans
- Flaky sea salt (optional)
Method
Step 1
- Set the oven to 170°C.
- Oil an 18–20 cm tin or grease it with baking paper.
Step 2
Blend all the dry ingredients.
Step 3
Mix almond butter, coconut oil, khandsari sugar, vanilla and vegan milk in a separate bowl.
Step 4
- Add the wet mixture to the dry one and stir until incorporated.
- Avoid mixing too much.
- Overmixed batter results in dense cookies.
Step 5
Stir in the dark chocolate and pecan nuts leaving some for the decoration.
Step 6
- Pour the mixture into a prepared tin and even out the surface with a knife or spatula.
- Decorate with remaining dark chocolate and toasted pecans.
- Add a little bit of sea salt flakes if desired.
Step 7
- Bake in the preheated oven for 18–22 minutes.
- Make sure that the sides are done but the center is slightly raw.
- This is what you should achieve. The Cookie Tin will cook further during cooling process.
Step 8
- Let it cool for about 10 minutes.
- After that take a spoon in hands.
- No cutting necessary.
